Macaroni Mayhem
Lunch today was a feast of leftovers. The basic recipe for the macaroni and cheese bake is quite simple – 400ml milk, 2 eggs, and 100g cheese whisked together and added to 500g of cooked macaroni. (Ideally, it should also have salt and nutmeg added to the mixture, but I wanted to feed some to Little Man, so I left out the salt.) I wanted something a little more flavourful today, so I added cooked sausages, peppers, mushrooms, and tomatoes, to the mixture. Then I topped off the whole lot with another 100g of cheese, and popped it in the oven at 200C for 20 minutes. Easy peasy! And it makes enough to feed approximately six people.
