Mmm mini apple pies

One of the things I missed the most when I moved out of home was my mother’s apple tarts. Delicious thin slices of crumbly pastry with a sugary apple filling. Like all good home cooking, no one makes apple tarts quite the way Mammy does!

When Little Man and I were visiting my parents last weekend, they gave us a big bag of cooking apples to take home with us, fresh from the trees! So of course I decided it’s time to start looking for my own trademark home baking dish – the one that Little Man will miss when he moves away from home for the first time.

Making use of the shortbread cookie dough!

I had some shortbread pastry in the freezer from last month when Little Man and I made and decorated some cookies. Feeling inspired (read: too lazy to make more pastry), I decided to experiment and see how some sweet mini apple pies would turn out if I made them with the leftover pastry.

Filling each pastry case with apples and brown sugar

I rolled out the pastry and cut disks to fill a muffin tray. Then I filled each one with a few small slices of apple, sprinkled liberally with brown sugar. I used the remaining pastry to make the pie covers and then bunged the whole lot in the oven for 25 minutes at 180C.

They certainly look delicious!

The result!

And the verdict: yum yum yum. Bit too sweet for Little Man – think we’ll have to save these for tea for ourselves.
